Chinese invented the noodles and changed the way we eat, that’s not an overstatement. As a Chinese, noodles and rice are something I can’t do without. I use Chinese noodles a lot in everyday cooking and can’t even begin to think how my culinary experiences would have been, if noodles were never invented. Chinese noodles are versatile and there are so many ways to prepare them: stir-fry, pan-fry, boil, blanch, soup, gravy, or dry. I could never get bored of noodles. It’s one of the easiest foods to prepare at home, and the end results are always satisfying.
One of the most popular Chinese noodles in the US is chow mein or literally “fried noodles” in Cantonese dialect. Chow mein is also a favorite Chinese take-out item. Some shredded vegetables, some protein—either chicken, pork, beef, seafood, or combination—and you will have a perfect chow mein that is cheap, filling, and sinfully gratifying. Yeah, I am talking about that grease at the bottom of the chow mein.

Making chow mein or any Chinese noodles at home doesn’t have to be complicated, if you know which noodles to buy (which according to many non-Asians, it’s the toughest part of it all). I have to say that the varieties of Chinese noodles available in the market are rather overwhelming; however, if you narrow down your selection, things would get a lot easier—and manageable. So, let’s start with chow mein, which is also the name used for fresh noodles. There are two kinds of chow mein sold at the market: 1) steamed chow mein (pictured above), and 2) pan-fried chow mein. They are practically the same Chinese noodles, but the latter tends to be dryer and hence it’s for pan-fried purposes. I prefer steamed chow mein.

5 ways to take your grilling to a whole new level

(BPT) - It’s time to grab the tongs and apron because it is officially grilling season. You’ve waited months to reclaim your rightful position behind the grill, and it’s finally time to achieve your goal of making this your best grilling season yet.
Now, you need a game plan. To take your place as the rightful master of the grill this year, consider following these five barbecuing tips.
* Keep it clean. It may be the least glamourous part of your grilling experience, but keeping your grill clean is essential to delivering a quality product. A stiff wire brush is just the ticket along with plenty of oil once you’re done. Then, turn up the heat and enjoy preparing your meal on a clean, hot surface.
* Direct and indirect grilling. Many summer chefs aren’t familiar with these terms, but mastering direct and indirect grilling is a great way to bolster your cooking skills. Direct grilling cooks the food directly over the heat source and is perfect for smaller, thinner pieces. Indirect grilling cooks the food near the heat source — but not directly over it. This is good for larger, thicker items.
* Don’t fill the grill. A loaded grill is a mouth-watering sight but it jeopardizes the end result. Keep your grill at least 30 percent free so you have space to move food when the eventual flare up occurs.
* Use the right tools. When it comes to rotating food, a reliable set of tongs beats a barbecue fork any day. Puncturing meat allows juices to escape prematurely, so don’t stab your food with a fork and never press burgers with a spatula.
* Sit before you serve. For the best flavor, let your newly cooked meat sit for about 10 minutes before serving. The meat will be juicer and everyone will enjoy the meal a little bit more.

Ingredients
2-3 lbs. chicken breasts, thinly cut
Lettuce
Tomato, sliced
Mayo
Sesame seeds, for garnish
1 bottle King's Hawaiian Big Island Lava Sauce
1 package King's Hawaiian Original Sweet Hawaiian Hamburger Buns
Preparation
Step 1
Lightly season chicken with salt and pepper.
Step 2
Grill chicken. As chicken is cooking, use a basting brush to glaze each side of the chicken with King's Hawaiian Big Island Lava BBQ Sauce.
Step 3
Toast King's Hawaiian hamburger buns over indirect heat.
Step 4

Chipotle Burgers with Spicy Onions
Recipe: Chipotle Burgers with Spicy Onions
Ingredients:
  • 1 teaspoon olive oil
  • 1 large red onion, peeled and thinly sliced
  • 2 tablespoons Mrs. Dash® Southwest Chipotle Seasoning Blend, divided
  • 1 pound extra lean ground beef
  • 1/4 cup fresh cilantro, chopped
  • 2 egg whites, or egg substitute equivalent to 1 egg
  • 4 toasted hamburger buns
  • Sliced tomatoes, optional
  • Lettuce, optional
Preparation:
  1. Heat oil in large non-stick skillet, add onion and cook until golden and tender, about 10 minutes. Stir in 1 tablespoon seasoning blend, mix thoroughly and remove from heat.
  2. Gently mix ground beef, 1 tablespoon seasoning blend, cilantro, and egg whites or egg substitute. Mix well, and shape into 4 burgers.
  3. Preheat grill to medium-high heat and grill burgers for 8 to 10 minutes, turning once. Toast buns and top with burger and spicy onions. Garnish with tomato and lettuce, if desired.

Old Fashioned Cole Slaw
Recipe: Old Fashioned Cole Slaw
Ingredients:
  • 5 cups shredded cabbage
  • 1 cup shredded carrots
  • 8 radishes, sliced
  • 1/4 cup chopped green onion
  • 1/4 cup olive oil
  • 3 tablespoons cider vinegar
  • 2 1/2 tablespoons Mrs. Dash® Original Blend
  • 2 teaspoons sugar
  • 2 tablespoons lemon juice
Preparation:
  1. Combine cabbage, carrots, radishes and onion in large bowl; set aside.
  2. Combine oil, vinegar, seasoning blend, sugar and lemon juice in small bowl; mix well.
  3. Pour dressing over cabbage mixture; toss to mix well.
  4. Chill for 2 to 3 hours.
  5. Toss again before serving.

Salmon Fillets with Raspberry Citrus Sauce
Recipe: Salmon Fillets with Raspberry Citrus Sauce
Ingredients:
  • 1/4 cup sliced almonds, toasted
  • 1 cup water
  • 2/3 cup couscous
  • 1/2 cup chopped green onions
  • 1 pound skinned salmon fillets, 1 inch thick
  • 2 tablespoons Mrs. Dash® Garlic & Herb Seasoning Blend
  • 3/4 cup fresh squeezed orange juice
  • 1 cup minced shallots
  • 2 tablespoons raspberry preserves
  • 2 teaspoons fresh grated peeled ginger
  • 2 tablespoons raspberry vinegar
  • 1/4 cup fresh raspberries, optional garnish
Preparation:
  1. To toast almonds, place in a small skillet over medium heat, shaking often until golden all over, approximately 4 minutes.
  2. Preheat broiler. Bring water to a boil in medium saucepan and remove from heat. Stir in couscous and green onion.
  3. Rinse and pat dry salmon fillets, then sprinkle seasoning blend on each side. Place fillets on a broiler pan coated with non-stick spray. Broil 5 minutes per side, 5 to 6 inches from heat source.
  4. Over medium heat, bring orange juice and shallots to a slight boil in a small saucepan. Lower heat and whisk in raspberry preserves, ginger and vinegar; keep warm while salmon is cooking.
  5. Fluff couscous with fork and place equal amounts on 4 dinner plates. Lay a piece of salmon on top. Drizzle citrus sauce over salmon and sprinkle almonds on top. Garnish top with raspberries, if desired.

Caribbean Pork Kabobs
Recipe: Caribbean Pork Kabobs
Ingredients:
  • 1/2 cup pineapple juice
  • 3 tablespoons Mrs. Dash® Caribbean Citrus Seasoning Blend, divided
  • 1 pound pork tenderloin, cut into small cubes
  • 1 sweet onion, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1/2 fresh pineapple, peeled, cut into cubes
Preparation:
  1. Mix pineapple juice and 2 tablespoons seasoning blend in a small bowl.
  2. Pour 3/8 cup (6 tablespoons) of the pineapple juice mixture over the pork in a separate bowl and the remaining over the vegetables. Stir to coat evenly.
  3. Cover and refrigerate for about 1 hour.
  4. Thread pork pieces onto 9 skewers, alternating with onion, pepper and pineapple cubes. Sprinkle on remaining 1 tablespoon seasoning blend.
  5. Grill or broil for 10 to 15 minutes or until pork is thoroughly cooked.

 easy ways to make your summer BBQ a smoking success

(BPT) - Mouthwatering meats, refreshing beverages, a relaxed atmosphere and great company — what better way to enjoy the beautiful weather than with your favorite folks at a summer barbecue? Follow these five simple tips to celebrate a season of BBQ with the ones you love. 
Cut down on prep time with easy-to-make food options
If you want truly authentic-tasting BBQ, you can't speed up the slow-cook process. You can, however, let someone else do most of the work. Buying meat that’s already been cooked slow and low for hours cuts down on prep and cleaning time, while still letting you and your family and friends savor (and devour!) delicious BBQ. If you want to tackle the grill yourself, let “Dr. BBQ” help you out. E. Lee Wiley, Ph.D., Principal Scientist, Research and Development for Farm Rich Smokehouse BBQ in Gallatin, Tennessee, offers a few basic prep tips:
“Start with quality pork — Picnic Shoulders or Boston Butts — and rub the raw meat down with coarse salt and coarse ground black pepper to taste. Choose a wood type of your liking, such as hickory, mesquite, apple or alder. Slow cook and smoke the rubbed meat at 225 degrees for 6-8 hours depending on the meat’s thickness. For brisket, start with good, quality beef and don’t trim the fat before you smoke or cook, as this helps keep the meat moist. Inject a marinade into the meat before cooking, then cook at 225 degrees for 10-12 hours.”
Choose perfect pairings
Whether you make pulled pork or brisket sandwiches, pair meats with baked beans, use them in a salad, or let the BBQ stand alone, you can expect your main dish to be a huge hit among guests by following these tips. 
When you have delicious BBQ pork, brisket or chicken, let that star shine. Only serve one or two complementary sides and one memorable summertime dessert to complete the meal. Libbie Summers, author of "The Whole Hog Cookbook," adds, "Backyard barbecues are meant to be casual, so make everything 'help yourself' from drinks to dessert. Also, don't offer a lot of different food choices — just make everything delicious!"
A chilled pasta salad and fresh grilled corn on the cob go well with BBQ and are simple to make. You could also let your guests customize sandwiches by putting out a few easy toppings such as coleslaw, fresh garden tomatoes, crispy breaded onion rings or even fried pickles!
For that special sweet ending, cookie ice cream sandwiches are a big summer hit and take no time to make. Just grab your favorite ice cream, soften it and place between home baked or pre-made cookies or wafers, and then put in the freezer until ready to eat. 
Keep drinks simple
You don't have to buy several brands of soda or mix up fancy cocktails for thirsty guests. Just serve a fresh pitcher of homemade lemonade, toss in a few sprigs of fresh thyme and offer an “adult” version as well with your favorite libation. Also have a pitcher of cool water on hand (consider adding some fun refreshers like sliced strawberries and mint) to ensure everyone stays hydrated. 
Add energy with a lively playlist
A music playlist is an easy way to turn your party up a notch, and it doesn't require you to spend a lot of money, if any at all. Select your favorite summer jams or reminisce on your glory days with nostalgic hits. You can even add a few festive songs, like Tim McGraw’s “Something Like That” and Memphis Minnie’s “Pig Meat On the Line,” to your playlist just for fun! 
Keep kids (and adults!) entertained
It's easy to keep the kids distracted with a few activities and games on hand. Have a little plastic tub filled with kids’ water squirters or water balloons and allow some space in the backyard for play. (Keep towels on hand for drying off!) Fill a basket with other goodies like bubbles, jump ropes and sidewalk chalk, or set up or spray paint Twister on your lawn and put out a bean bag toss game. Another activity? Simply cut open a watermelon and let the seed spitting contest begin!
